Cheesy Chile Grits
1fresh jalapeno fine diced (seeds & removed)
1 Tbsplousiana style hot sauce (not tabasco sauce)
1 c(heaping) quick cooking grits
3/4 cshredded swiss cheese( any kind would do fine-this is what i had on hand)
1 cshredded sharp cheddar
How to Make Cheesy Chile Grits
- In Medium sauce pan, add first 5 ingredients and bring to rolling boil. Add grits and stir 1 minute then reduse heat to simmer and cook 15 minutes covered. Keep close eye on them and stir frequently.
- Add milk and combine well. Cook uncovered for 5 minutes. Should have a very creamy texture. Turn off heat and add cheeses and mix well.
- Serve as a side dish, or for a complete breakfast serve in bowls with an over-easy egg on top and let yolk run all over it. (This is my personal favorite). ENJOY
