cheese pancakes
This is one of my favorite go to recipes for a quick and easy breakfast or supper. It's now a comfort food for me. I prefer to make it with sharp cheddar cheese but use what you like and make it yours.

Ingredients
- 1 cup shredded cheese, preferred kind
- 1/8 cup soy or other low carb flour
- 1 dash sea salt
- 1 large egg
- 1/8 cup sour cream, cottage cheese, or cream cheese
- - butter
How To Make cheese pancakes

Step 1Mix the cheese, flour and salt with a fork or hands.

Step 2Stir in the egg and sour cream or cream cheese. Mix well with a fork or whisk.

Step 3Heat 1 or 2 Tbsp of butter (I often use coconut oil) in a skillet over medium heat and drop the batter with a ladle or spoon onto the hot skillet. Fry until the bottom is golden, then turn and fry the other side until done.

Step 4Serve with butter, syrup, or whatever you like. I eat this with just a bit of garlic powder and pepper with a side of fruit but it's also delicious with gravy!
