My sister-in-laws friend, Lisa, in South Carolina made these for us when we visited. Sooooo good!

Ingredients

  • 2 slices or more, bacon - cook and crumble
  • 2 cans 14 1/2 oz cans chicken broth
  • 1/2 teaspoon salt
  • 1 cup quick cooking grits
  • 2 cans ro-tel tomatoes w/green chilis
  • 1 cup medium sharp cheddar cheese, shredded

How To Make cheese grits

  • Step 1
    Cook bacon and reserve drippings. Bring drippings, chicken broth and salt to boil. Stir in grits and tomatoes and return to boil, stirring often.
  • Step 2
    Reduce heat and simmer 15 - 20 minutes, stirring often. Stir in cheese and bacon. Cover and let stand 5 minutes. Can be put in crock pot on warm to serve.
