Ingredients
- 1 small head of cauliflower
- 2 teaspoons salt
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 1 tablespoon Dijon mustard
- 1 1/2 cups guinness beer
- 2 teaspoons Worcestershire sauce
- 3 cups sharp cheddar cheese
- 4 slices hearty grain bread, 2 inch thick
- olive oil
- fresh parsley, for garnish
How To Make cauliflower and guinness rarebit toast

Step 1Break the cauliflower into small florets. Bring a pot of salted water to a boil and add the cauliflower and cook until the cauliflower is cooked but not mushy. Drain.

Step 2In a saucepan add the butter and let it melt. Whisk in the flour and whisk 1 minute. Add the mustard and whisk to incorporate it.

Step 3Drizzle in the Guiness whisking constantly until smooth.

Step 4Add the Worcestershire sauce and cheese. Cook until the cheese is melted.

Step 5Brush the bread with the olive oil. Set under the broiler and broil both sides until toasted.

Step 6Place the cauliflower on the toast then pour the cheese mixture over top. Garnish with parsley. Enjoy.
