I made this for lunch, and it was delicious. I love having toasts for lunch.

Ingredients

  • 1 small head of cauliflower
  • 2 teaspoons salt
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 1 tablespoon Dijon mustard
  • 1 1/2 cups guinness beer
  • 2 teaspoons Worcestershire sauce
  • 3 cups sharp cheddar cheese
  • 4 slices hearty grain bread, 2 inch thick
  • olive oil
  • fresh parsley, for garnish

How To Make cauliflower and guinness rarebit toast

  • Step 1
    Break the cauliflower into small florets. Bring a pot of salted water to a boil and add the cauliflower and cook until the cauliflower is cooked but not mushy. Drain.
  • Step 2
    In a saucepan add the butter and let it melt. Whisk in the flour and whisk 1 minute. Add the mustard and whisk to incorporate it.
  • Step 3
    Drizzle in the Guiness whisking constantly until smooth.
  • Step 4
    Add the Worcestershire sauce and cheese. Cook until the cheese is melted.
  • Step 5
    Brush the bread with the olive oil. Set under the broiler and broil both sides until toasted.
  • Step 6
    Place the cauliflower on the toast then pour the cheese mixture over top. Garnish with parsley. Enjoy.
