Oh I remember having this the very first time, while eating outside on a covered porch, overlooking the ocean in Puerto Rico. There was a buffet style breakfast, and someone making omlets, and another station was preparing French toast. Breakfast eaten outdoors is so luxurious and this was delicious.

Ingredients
- 4 slices thick bread, like sourdough, french bread, or multigrain bread
- 2 - eggs beaten lightly
- 1/4 cup milk or cream
- 1/4 teaspoon cinnamon
- 2 teaspoons sugar
- 1 - banana
- 1 cup corn flakes, crushed
- 1/4 cup real maple syrup
- 1 tablespoon raspberry jam, or orange marmalade
- 2 tablespoons oil for frying.
How To Make caribbean french toast

Step 1Mix the eggs, milk, sugar and cinnamon. Dip the bread into this mixture first, and then into the corn flakes.

Step 2Heat a large skillet and add butter or oil, enough to coat the pan. Pan fry the French toast until lightly browned and not soggy.

Step 3Place the first slice on a large plate, spread the jam, then lay the sliced banana on top of it, layer the second slice of bread, and pour on the maple syrup.
