Ingredients For buttermilk scones with oats and dried cranberries

  • 2 c
    flour (bread or a.p.)
  • 1/2 c
    oatmeal, regular not quick cook
  • 3/4 tsp
    baking soda
  • 3/4 tsp
    baking powder
  • 1/4 tsp
    salt
  • 10 Tbsp
    butter, cubed
  • 1/2 c
    dried cranberries
  • 3/4 c
    buttermilk

How To Make buttermilk scones with oats and dried cranberries

    Combine flour, oats, baking powder, baking soda and salt - mix well.

    Add 10 tbsp. cubed butter to the dry ingredients and work in with a pastry cutter (hint - you can also freeze the butter and grate it in). You want mixture to resemble coarse crumbs.

    Next add cranberries and mix well - then add buttermilk and mix until it just comes together.

    Flour our board and then knead dough until it just comes together. Using a pizza stone, pat out dough to a circle about 1" thick. Cut circle into 8 wedges using a pizza cutter.

    Brush the top with a little egg and buttermilk mixed together. Sprinkle with granulated sugar on top. Bake at 375 degrees F for 20-25 minutes. Feel free to brush tops with cream when they come out of the oven.
