buttermilk pancakes- mrs. batterberry

This recipe is from Sister/Aunt Viola 7/14/1976 who got it from "Mrs. Fire News" submitted by Mrs. Kenneth Batterberry 4/1967. This is the only pancake recipe I use since 1976. They are so light and fluffy!

Ingredients

  • 1 quart buttermilk
  • 2 teaspoons salt
  • 6 tablespoons sugar
  • 6 - eggs, slightly beaten w/fork
  • 3 teaspoons rounded, baking powder
  • 2 teaspoons rounded, baking soda
  • 4 cups flour, or a bit more
  • 4 tablespoons butter, melted
  • 1 teaspoon vanilla

How To Make buttermilk pancakes- mrs. batterberry

  • Step 1
    First whisk dry ingredients together. Make a "well"; add remaining ingredients.
  • Step 2
    Beat really hard ( or use electric mixer). Batter may be made night before. Will keep "a couple of days" in refrigerator.
  • Step 3
    Use 1/4 cup or 1/3 cup batter per pancake. Don't need to grease griddle, but you may prefer to lightly grease it.
