buttermilk pancakes- mrs. batterberry
This recipe is from Sister/Aunt Viola 7/14/1976 who got it from "Mrs. Fire News" submitted by Mrs. Kenneth Batterberry 4/1967. This is the only pancake recipe I use since 1976. They are so light and fluffy!

Ingredients
- 1 quart buttermilk
- 2 teaspoons salt
- 6 tablespoons sugar
- 6 - eggs, slightly beaten w/fork
- 3 teaspoons rounded, baking powder
- 2 teaspoons rounded, baking soda
- 4 cups flour, or a bit more
- 4 tablespoons butter, melted
- 1 teaspoon vanilla
How To Make buttermilk pancakes- mrs. batterberry

Step 1First whisk dry ingredients together. Make a "well"; add remaining ingredients.

Step 2Beat really hard ( or use electric mixer). Batter may be made night before. Will keep "a couple of days" in refrigerator.

Step 3Use 1/4 cup or 1/3 cup batter per pancake. Don't need to grease griddle, but you may prefer to lightly grease it.
