Buttermilk Pancakes- Mrs. Batterberry
This is the only pancake recipe I use since 1976. They are so light and fluffy!
6eggs, slightly beaten w/fork
3 tsprounded, baking powder
2 tsprounded, baking soda
4 cflour, or a bit more
4 Tbspbutter, melted
How to Make Buttermilk Pancakes- Mrs. Batterberry
- First whisk dry ingredients together. Make a "well"; add remaining ingredients.
- Beat really hard ( or use electric mixer). Batter may be made night before. Will keep "a couple of days" in refrigerator.
- Use 1/4 cup or 1/3 cup batter per pancake. Don't need to grease griddle, but you may prefer to lightly grease it.
