buttermilk pancakes
This is a recipe for delicious buttermilk pancakes that I found in a Gooseberry Patch cookbook (Homestyle Family Favorites). *For a buttermilk substitute, mix 1 tablespoon of lemon juice or vinegar into 1 cup of milk (I used lemon juice).

Ingredients
- 1 3/4 cups all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 - eggs
- 2 cups buttermilk* (see my notes)
- 1/4 cup oil
- 1/2 teaspoon vanilla extract
How To Make buttermilk pancakes

Step 1Combine the first 5 ingredients in a large bowl; set aside.

Step 2Beat together eggs, butttermilk, oil and vanilla in a mixing bowl; stir into flour mixture just until moistened.

Step 3Pour batter by 1/4 cupfuls onto a greased hot griddle; turn pancakes when bubbles appear on the surface; cook until golden.
