This is a recipe for delicious buttermilk pancakes that I found in a Gooseberry Patch cookbook (Homestyle Family Favorites).
*For a buttermilk substitute, mix 1 tablespoon of lemon juice or vinegar into 1 cup of milk (I used lemon juice).

How To Make
Combine the first 5 ingredients in a large bowl; set aside.
Beat together eggs, butttermilk, oil and vanilla in a mixing bowl; stir into flour mixture just until moistened.
Pour batter by 1/4 cupfuls onto a greased hot griddle; turn pancakes when bubbles appear on the surface; cook until golden.
