Buttermilk Pancakes

This is a recipe for delicious buttermilk pancakes that I found in a Gooseberry Patch cookbook (Homestyle Family Favorites).

*For a buttermilk substitute, mix 1 tablespoon of lemon juice or vinegar into 1 cup of milk (I used lemon juice).

  • 1 3/4 c
    all-purpose flour
  • 2 Tbsp
  • 2 tsp
    baking powder
  • 1 tsp
    baking soda
  • 1/2 tsp
  • 2
  • 2 c
    buttermilk* (see my notes)
  • 1/4 c
  • 1/2 tsp
    vanilla extract

How to Make Buttermilk Pancakes


  1. Combine the first 5 ingredients in a large bowl; set aside.
  2. Beat together eggs, butttermilk, oil and vanilla in a mixing bowl; stir into flour mixture just until moistened.
  3. Pour batter by 1/4 cupfuls onto a greased hot griddle; turn pancakes when bubbles appear on the surface; cook until golden.
