Buttermilk Pancakes

This is a recipe for delicious buttermilk pancakes that I found in a Gooseberry Patch cookbook (Homestyle Family Favorites).

*For a buttermilk substitute, mix 1 tablespoon of lemon juice or vinegar into 1 cup of milk (I used lemon juice).

Ingredients

1 3/4 c
all-purpose flour
2 Tbsp
sugar
2 tsp
baking powder
1 tsp
baking soda
1/2 tsp
salt
2
eggs
2 c
buttermilk* (see my notes)
1/4 c
oil
1/2 tsp
vanilla extract

Step-By-Step

1Combine the first 5 ingredients in a large bowl; set aside.
2Beat together eggs, butttermilk, oil and vanilla in a mixing bowl; stir into flour mixture just until moistened.
3Pour batter by 1/4 cupfuls onto a greased hot griddle; turn pancakes when bubbles appear on the surface; cook until golden.
