This bad boy is tasty as all get out! Of course if you're not diabetic you can use regular preserves, cream cheese, & real maple syrup! BTW you can use ANY flavor preserves you want as well! This is one I learned from the Weerz brothers 2 German born chefs that I had the great pleasure to work for for 13 years in St. Louis! These men could make dirt taste good!

Ingredients
- 1 - loaf of bread, cut in half lengthwise
- 8 ounces light cream cheese, softened
- 1/2 cup sugar free peach preserves
- 12 large eggs
- 1 cup heavy cream
- 1/2 cup sugar free syrup
- - ground cinnamon
How To Make bunyan's diabetic stuffed french toast

Step 1Spray a 9 x 13" pan with Pam.

Step 2Slice the loaf of bread in half, lenghtwise

Step 3Cream together the cream cheese and preserves.

Step 4Spread generously on both slices of French bread.

Step 5Beat together the eggs, cream and sugar free syrup.

Step 6Pour over the bread..sprinkle with cinnamon..cover with saran wrap and put in fridge overnight.

Step 7Next day, bake at 350 oven for 35 to 40 minutes. Remove from oven. and serve with warm sugar free syrup.
