breakfast tortillas

Yet another orphaned recipe I've adopted! Looks very nice like it is!!! But I may tweak it a bit!

Ingredients

  • 2 cups frozen hash brown potatoes
  • 1 cup cooked brown rice
  • 1/4 cup chopped green onion
  • 1/3 cup salsa
  • 1/3 cup corn kernels, frozen
  • 5 - whole wheat tortillas

How To Make breakfast tortillas

  • Step 1
    Cook the potatoes in a dry nonstick skillet, stirring frequently, until lightly browned, about 15 minutes.
  • Step 2
    Add the remaining ingredients, except the tortillas, and cook another 5 minutes, stirring occasionally, until heated through.
  • Step 3
    Spoon a line of the mixture down the center of each tortilla.
  • Step 4
    Roll up and eat.
