Yet another orphaned recipe I've adopted! Looks very nice like it is!!! But I may tweak it a bit!

Ingredients

  • 2 c
    frozen hash brown potatoes
  • 1 c
    cooked brown rice
  • 1/4 c
    chopped green onion
  • 1/3 c
    salsa
  • 1/3 c
    corn kernels, frozen
  • 5
    whole wheat tortillas

How to Make Breakfast Tortillas

Step-by-Step

  1. Cook the potatoes in a dry nonstick skillet, stirring frequently, until lightly browned, about 15 minutes.
  2. Add the remaining ingredients, except the tortillas, and cook another 5 minutes, stirring occasionally, until heated through.
  3. Spoon a line of the mixture down the center of each tortilla.
  4. Roll up and eat.
