My Son's friend from high school went running with him and his friends this morning,when they came back she offered to make breakfast.I told her to help herself to anything she wanted to use. I did some extensive grocery shopping,so she had a lot to choose from.She came up with some great breakfast tacos , fried potatoes and cranberry-orange juice. My husband and I already ate,but I ate a taco she made for me with no meat,my husband didn't turn down a 2nd breakfast! It was delicious. I don't know if I can get used to another woman in my kitchen cooking for my son(she seems to be trying hard)

Ingredients

  • - taco size flour tortillas
  • - canola oil
  • - 1/2 onion
  • - green onions
  • - smoked turkey sausage,sliced
  • - jalapeños,minced
  • - cilantro,chopped
  • - eggs
  • - colby cheese,grated
  • - salsa of your choice

How To Make breakfast tacos

  • Step 1
    Wrap tortillas in foil,heat in a 300 deg.oven Heat oil in a skillet,sauté onions until translucent,add sausage,green onions and jalapeño and cook until sausage is warm. Mix well.Remove from heat.In the same skillet,scramble eggs lightly with cheese,season with salt and pepper.remove from heat.Add a tablespoon of the turkey mixture and a tablespoon of eggs in heated tortillas,top with salsa.
