Ingredients
- 3 medium russet potatoes
- 4 tablespoons olive oil
- 8 ounces bulk breakfast sausage
- 8 large eggs
- 2 tablespoons water
- 2 tablespoons unsalted butter
- 1/2 teaspoon salt, divided
- 1/2 teaspoon black pepper, divided
- 4 ounces cheddar cheese, shredded
- 1/8 cup chopped chives
How To Make breakfast nachos

Step 1Preheat oven to 350 degrees. Thinly slice baked potatoes lengthwise.

Step 2Preheat 1 Tbsp of olive oil in a large skillet over medium heat.

Step 3Using 1 Tbsp of oil each time, fry potato slices in heated oil in batches.

Step 4Fry until golden brown on both sides, 2-3 minutes per side.

Step 5Drain potatoes on paper towels.

Step 6In the same pan, brown sausage over medium heat, stirring often until cooked through, 7-9 minutes. Drain grease.

Step 7Whisk the eggs in a bowl with 2 Tbsp water.

Step 8Melt butter in the pan.

Step 9Cook scrambled eggs on low heat for 7 minutes.

Step 10Use a rubber spatula constantly move the eggs around while cooking.

Step 11Add 1/4 tsp salt and 1/4 tsp pepper to the eggs.

Step 12On a baking sheet, assemble cooked potatoes in a single layer. Season with 1/4 tsp salt and 1/4 tsp pepper.

Step 13Top with sausage.

Step 14Add the scrambled eggs.

Step 15Sprinkle the cheese.

Step 16Add chopped chives.

Step 17Put breakfast nachos in a 350-degree oven.

Step 18Bake for 15 minutes or until heated through, and the cheese is melted.
