A great way to mix up Sunday mornings! My kids love this.

Ingredients

  • 3 medium russet potatoes
  • 4 tablespoons olive oil
  • 8 ounces bulk breakfast sausage
  • 8 large eggs
  • 2 tablespoons water
  • 2 tablespoons unsalted butter
  • 1/2 teaspoon salt, divided
  • 1/2 teaspoon black pepper, divided
  • 4 ounces cheddar cheese, shredded
  • 1/8 cup chopped chives

How To Make breakfast nachos

  • Step 1
    Preheat oven to 350 degrees. Thinly slice baked potatoes lengthwise.
  • Step 2
    Preheat 1 Tbsp of olive oil in a large skillet over medium heat.
  • Step 3
    Using 1 Tbsp of oil each time, fry potato slices in heated oil in batches.
  • Step 4
    Fry until golden brown on both sides, 2-3 minutes per side.
  • Step 5
    Drain potatoes on paper towels.
  • Step 6
    In the same pan, brown sausage over medium heat, stirring often until cooked through, 7-9 minutes. Drain grease.
  • Step 7
    Whisk the eggs in a bowl with 2 Tbsp water.
  • Step 8
    Melt butter in the pan.
  • Step 9
    Cook scrambled eggs on low heat for 7 minutes.
  • Step 10
    Use a rubber spatula constantly move the eggs around while cooking.
  • Step 11
    Add 1/4 tsp salt and 1/4 tsp pepper to the eggs.
  • Step 12
    On a baking sheet, assemble cooked potatoes in a single layer. Season with 1/4 tsp salt and 1/4 tsp pepper.
  • Step 13
    Top with sausage.
  • Step 14
    Add the scrambled eggs.
  • Step 15
    Sprinkle the cheese.
  • Step 16
    Add chopped chives.
  • Step 17
    Put breakfast nachos in a 350-degree oven.
  • Step 18
    Bake for 15 minutes or until heated through, and the cheese is melted.
