Ingredients

  • 2 tablespoons olive oil
  • 12 ounces breakfast sausage
  • 1 large red bell pepper, seeded and chopped
  • 1 small yellow onion, diced
  • 1 large jalapeno seeded and chopped
  • 6 eggs beaten
  • 1/2 cup mayonnaise
  • 2 tablespoons Sriracha
  • 2 teaspoons sugar
  • 1/2 cup black beans drained
  • 1/2 cup Cotija cheese, crumbled
  • 1 bag kettle cooked potato chips
  • cilantro, for garnish

How To Make breakfast nachos

  • Step 1
    Coat a skillet with 1 tablespoon of olive oil. Add the sausage and begin to break it up.
  • Step 2
    Add the bell pepper, onion, and jalapeno and cook until softened. Stir in the black beans and cook until warmed through.
  • Step 3
    Mix the mayonnaise, Sriracha sauce, and sugar together Set aside.
  • Step 4
    Whisk the eggs together and place the other tbsp of olive oil in a skillet, and scramble the eggs until done.
  • Step 5
    Line 4 plates with chips. Top with the sausage mixture, then the eggs. Drizzle the mayo mixture over top and sprinkle on the Cotija cheese, then cilantro. Enjoy
