Ingredients
- 2 tablespoons olive oil
- 12 ounces breakfast sausage
- 1 large red bell pepper, seeded and chopped
- 1 small yellow onion, diced
- 1 large jalapeno seeded and chopped
- 6 eggs beaten
- 1/2 cup mayonnaise
- 2 tablespoons Sriracha
- 2 teaspoons sugar
- 1/2 cup black beans drained
- 1/2 cup Cotija cheese, crumbled
- 1 bag kettle cooked potato chips
- cilantro, for garnish
How To Make breakfast nachos

Step 1Coat a skillet with 1 tablespoon of olive oil. Add the sausage and begin to break it up.

Step 2Add the bell pepper, onion, and jalapeno and cook until softened. Stir in the black beans and cook until warmed through.

Step 3Mix the mayonnaise, Sriracha sauce, and sugar together Set aside.

Step 4Whisk the eggs together and place the other tbsp of olive oil in a skillet, and scramble the eggs until done.

Step 5Line 4 plates with chips. Top with the sausage mixture, then the eggs. Drizzle the mayo mixture over top and sprinkle on the Cotija cheese, then cilantro. Enjoy
