I got this recipe from my mother-in-law and it's my husbands and sons favorite!

Ingredients

  • 1 package bacon
  • 1 can mushrooms
  • 1 small green pepper
  • 1 small onion
  • 2 cups cheddar cheese
  • CREPE INGREDIENTS
  • 3 - eggs
  • 2/3 cup flour
  • 1/4 teaspoon salt
  • 2 cans small or one large cans tomato sauce

How To Make breakfast crepes

  • Step 1
    Mix together the ingredients for crepes and cook in a small amount of oil at a medium heat 1/4 cup of mixture at a time. Put aside.
  • Step 2
    Cut up bacon into pieces and fry in skillet until it is starting to cook then add onion and green pepper. Cook until done. Add mushrooms and heat and then cheese. Take your crepes and add approx. 1/4 cup of mixture in each crepe and put folded side down in a dish. I use a 9/11 pan. Then add tomato sauce over top. And cook at 375 for approx. 15 minutes
  • Step 3
    This can be stored overnight in the refrigerator and then warmed up the next morning since it takes a while to put together. I don't add the tomato sauce until right before I bake it.
