Ingredients

  • 3 cups apple juice
  • 1 cup golden raisins
  • 1/2 cup dried cranberries
  • 1 cup quick cooking couscous
  • 1 - Granny Smith apple, peeled and sliced
  • 2 tablespoons crystalized ginger

How To Make breakfast couscous

  • Step 1
    In a bowl, add 1 cup of apple juice in a bowl. Add the raisins and dried cranberries. Let sit overnight at room temperature.
  • Step 2
    Place the remaining 2 cups of apple juice in a saucepan. Bring to a boil. Reduce heat and add the couscous. Cook until the apple juice has been absorbed.
  • Step 3
    Drain the raisins and cranberries and stir into the couscous. Top with the apple and ginger. Drizzle a little milk over if you want to or eat as is.
