Ingredients
- 1/3 cup applesauce
- 1 large egg
- 2 1/2 cups old-fashioned rolled oats
- 1 cup nut butter
- 1/3 cup honey
- 1 tablespoon honey
- 1 teaspoon vanilla
- 1 cup fresh or frozen blueberries
How To Make breakfast cookies

Step 1Preheat oven to 325 degrees. Line 2 baking sheets with parchment paper. Set aside.

Step 2Add all ingredients to large bowl and mix together until well combined.

Step 3Scoop mounds of dough, about 1/4 cup each, onto baking sheets. Gently press down on cookies to create a flatter shape.

Step 4Bake for 18 - 20 minutes until the sides are lightly browned.

Step 5Allow to cool 5 minutes on baking sheet. Transfer to wire rack.

Step 6Enjoy!

Step 7Notes: I've used almond butter, chunky peanut butter and cashew butter and all were very good. Cookies freeze well. Bring to room temperature before eating.
