Cookies for Breakfast. What can be better than that?

Makes 12 Cookies


  • 1/3 c
  • 1 large
  • 2 1/2 c
    old-fashioned rolled oats
  • 1 c
    nut butter
  • 1/3 c
  • 1 Tbsp
  • 1 tsp
  • 1 c
    fresh or frozen blueberries

How to Make Breakfast Cookies


  1. Preheat oven to 325 degrees. Line 2 baking sheets with parchment paper. Set aside.
  2. Add all ingredients to large bowl and mix together until well combined.
  3. Scoop mounds of dough, about 1/4 cup each, onto baking sheets. Gently press down on cookies to create a flatter shape.
  4. Bake for 18 - 20 minutes until the sides are lightly browned.
  5. Allow to cool 5 minutes on baking sheet. Transfer to wire rack.
  6. Enjoy!
  7. Notes: I've used almond butter, chunky peanut butter and cashew butter and all were very good.

    Cookies freeze well. Bring to room temperature before eating.
