My Mother fixed Bread Cakes for breakfast. It was my favorite breakfast meal. I have recreated the recipe from memory. It is a great recipe for using up stale bread (heels and left over bread). Make some bread cakes for breakfast and serve with butter and syrup. YUM!

Ingredients
- 14-16 slices stale bread and or heels
- 2 tablespoons corn meal (i use white)
- 2 tablespoons sugar
- 2 - eggs
- 1 1/2 cups canned milk or half and half - more if needed
- 1/2 teaspoon cinnamon (optional)
How To Make bread cakes

Step 1Break the bread into small pieces, add corn meal, sugar, eggs and milk and mix until well mixed. Add more milk if necessary until the mixture is a little wet. Let mixture sit for 5 minutes. Add more milk if it appears dry.

Step 2Heat griddle and oil to about 300 – 325 degrees. Spoon the batter on the griddle in small to medium cakes. Cook until brown on both sides and serve with butter and maple syrup. Makes about 6 cakes.

Step 3This recipe is from my mother. Her family made this for breakfast during the depression. I grew up eating this and love it.
