My Mother fixed Bread Cakes for breakfast. It was my favorite breakfast meal. I have recreated the recipe from memory. It is a great recipe for using up stale bread (heels and left over bread).

How to Make Bread Cakes

Step-by-Step

  1. Break the bread into small pieces, add corn meal, sugar, eggs and milk and mix until well mixed. Add more milk if necessary until the mixture is a little wet. Let mixture sit for 5 minutes. Add more milk if it appears dry.
  2. Heat griddle and oil to about 300 – 325 degrees. Spoon the batter on the griddle in small to medium cakes. Cook until brown on both sides and serve with butter and maple syrup. Makes about 6 cakes.
  3. This recipe is from my mother. Her family made this for breakfast during the depression. I grew up eating this and love it.
