My Mother fixed Bread Cakes for breakfast. It was my favorite breakfast meal. I have recreated the recipe from memory. It is a great recipe for using up stale bread (heels and left over bread). Make some bread cakes for breakfast and serve with butter and syrup. YUM!

Heat griddle and oil to about 300 – 325 degrees. Spoon the batter on the griddle in small to medium cakes. Cook until brown on both sides and serve with butter and maple syrup. Makes about 6 cakes.

This recipe is from my mother. Her family made this for breakfast during the depression. I grew up eating this and love it.
