Great recipe from Gracehill B & B, with a couple new ideas of course. Be sure to cool about 10 minutes before serving - if you can keep the tasters out of it!

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/4 cup butter, softened
  • 1/2 cup milk, 2% or soy
  • 1 - egg
  • 2 cups fresh or frozen blueberries
  • 1/2 cup white chocolate baking chips
  • STREUSEL
  • 1/2 cup brown sugar
  • 1/3 cup all purpose flour
  • 1/4 cup butter

How To Make blueberry white chocolate coffee cake

  • Step 1
    HEAT OVEN TO 350 DEGREES. GREASE AND FLOUR AN 8X8 INCH BAKING PAN.
  • Step 2
    MAKE STREUSEL BY COMBINING BROWN SUGAR AND FLOUR AND THEN CUTTING IN BUTTER UNTIL UNIFORMLY CRUMBLY. SET ASIDE.
  • Step 3
    BEAT FLOUR, SUGAR, BAKING POWDER, BUTTER, MILK, AND EGG UNTIL MOISTENED, THEN ONE MINUTE ON MEDIUM SPEED. SPREAD HALF THE BATTER IN THE PAN. (IT IS THICK AND DOES NOT COMPLETELY COVER THE BOTTOM - IT'S OK.)
  • Step 4
    SPRINKLE HALF OF THE STREUSEL AND BLUEBERRIES AND 1/4 CUP WHITE CHOCOLATE CHIPS ON TOP OF THE BATTER.
  • Step 5
    LAYER ON THE REST OF THE BATTER (THIS IS A CHALLENGE, BUT IMPERFECTION IS STILL OK).
  • Step 6
    TOP THIS LAYER WITH THE REST OF THE STREUSEL, BLUEBERRIES AND WHITE CHOCOLATE CHIPS.
  • Step 7
    BAKE 45 MINUTES TO 1 HOUR OR UNTIL TOOTHPICK COMES OUT CLEAN.
  • Step 8
    COOL 10 MINUTES (IF YOU CAN WAIT THAT LONG) AND CUT INTO SQUARES AND WATCH IT DISAPPEAR!!
