Ingredients

  • 2 cups all purpose flour
  • 3/4 cup sugar
  • 2 teaspoons baking powder
  • 1 large egg
  • 1/2 cup milk
  • 1/2 cup butter, softened
  • 1 cup fresh blueberries
  • 1 cup pecans, chopped
  • STREUSEL TOPPING
  • 1/2 cup sugar
  • 1/3 cup all purpose flour
  • 1/4 cup cold butter

How To Make blueberry streusel coffee cake

  • Step 1
    Preheat oven to 350º
  • Step 2
    In a large bowl, combine flour, sugar, and baking powder. Whisk egg, milk and butter. Stir into dry ingredients.
  • Step 3
    Fold in blueberries and pecans. Spread into a greased 9 inch square baking pan.
  • Step 4
    For topping, combine sugar and flour in a bowl. Cut in butter until crumbly. Sprinkle over batter.
  • Step 5
    Bake 35 - 40 minutes or until a toothpick inserted in center comes out clean. Cool on a wire rack.
