Ingredients

  • 2 c
    all purpose flour
  • 3/4 c
    sugar
  • 2 tsp
    baking powder
  • 1 large
    egg
  • 1/2 c
    milk
  • 1/2 c
    butter, softened
  • 1 c
    fresh blueberries
  • 1 c
    pecans, chopped
  • STREUSEL TOPPING

  • 1/2 c
    sugar
  • 1/3 c
    all purpose flour
  • 1/4 c
    cold butter

How to Make BLUEBERRY STREUSEL COFFEE CAKE

Step-by-Step

  1. Preheat oven to 350º
  2. In a large bowl, combine flour, sugar, and baking powder. Whisk egg, milk and butter. Stir into dry ingredients.
  3. Fold in blueberries and pecans. Spread into a greased 9 inch square baking pan.
  4. For topping, combine sugar and flour in a bowl. Cut in butter until crumbly. Sprinkle over batter.
  5. Bake 35 - 40 minutes or until a toothpick inserted in center comes out clean. Cool on a wire rack.
