I used to work nights and come home just a little bit hungry. I thought it was a perfect snack to mix a flavored yogurt with instant oats. Who knew the Swiss really ate this? This recipe is a bit more work, but oh-so-much better! Agave nectar is not traditional, but it does have a lower glycemic index for some people.

Ingredients

  • 2 cups rolled oats
  • 200 milliliters milk
  • 80 milliliters apple juice
  • 5 ounces yogurt
  • 1 - granny smith apple, cored and coarsely grated
  • 3 tablespoons agave nectar
  • 1/2 cup raisins
  • 1/2 tablespoon vanilla extract
  • 1 - lime (just the juice)
  • 1/2 cup walnuts, lightly toasted and coarsely chopped
  • OPTIONAL TOPPING
  • - cooked or fresh fruit, optional (plums, peaches, apples, pears, berries

How To Make bircher muesli

  • Step 1
    In a large mixing bowl, combine the oats with the milk and apple juice. Let sit about 10 minutes to soften the oats.
  • Step 2
    Once ready to serve, stir in the yogurt, grated apple, agave nectar, raisins, vanilla, and lime juice. Transfer to serving bowls. Top with walnuts.
  • Step 3
    Top with additional fresh or cooked fruit if desired.
