berry good baked oatmeal
Baked oatmeal is a popular Amish breakfast. This one is quick and easy. The top is nice and crispy, while the oatmeal is creamy, yet full of texture. I sometimes add a good teaspoon of cinnamon to the sugar mixture. Or if using almonds, a bit of almond extract.

Easy and delicious, we can't think of a better way to start a cool day than with this baked oatmeal. The bottom layer is berry pie filling (we opted for blueberry) with fresh strawberries sprinkled on top and the combination of berry flavors is fantastic. Next, the sweetened oatmeal layer is tender and creamy once baked. This is a basic recipe that can be customized with extracts, spices, and pie filling to suit your taste buds. We topped it with vanilla yogurt and a few fresh berries for a wonderful breakfast.
Ingredients
- butter
- 3/4 cup light brown sugar
- 2 teaspoons baking powder
- 1 teaspoon salt
- 2 large eggs
- 2/3 cup canola oil
- 3 cups old-fashioned oats
- 1 cup milk
- 1 can blueberry or blackberry pie filling (21 oz)
- 2 cups strawberries, washed and quartered
- 1/2 cup chopped walnuts or almonds
- plain or vanilla yogurt, optional topping
- splash of cream, optional topping
How To Make berry good baked oatmeal

Step 1Preheat oven to 350 degrees F. Liberally butter a 9x13 baking dish.

Step 2In a large bowl, combine the brown sugar, baking powder, salt, eggs, and canola oil. Whisk until smooth.

Step 3Add the oatmeal and milk to the sugar mixture. Stir to combine.

Step 4Open the can of pie filling and spread it to cover the bottom of the prepared baking dish.

Step 5Sprinkle the strawberries evenly over the pie filling.

Step 6Spread the oatmeal mixture over the fruit.

Step 7Finally sprinkle the chopped nuts evenly over the top.

Step 8Bake until golden brown and the top is crispy; about 35 - 40 minutes.

Step 9Serve while hot. We like ours with a dollop of plain or vanilla yogurt or with a splash of cream.
