Ingredients
- 2 - eggs, separated
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1 cup flour
- 2 tablespoons orange juice, fresh
- 1 tablespoon butter melted
How To Make beignet batter

Step 1Beat egg yolks until light, add sugar and salt, beat well add flour. Add fruit juice, butter, an enough water to make the batter like pancake batter. Fold in stiffly beaten egg whites.

Step 2You can dip fruit in batter/ or not. Deep fry batter until a golden brown. Drain and sprinkle with powdered sugar.

Step 3Meat, Fish, vegetable, and omlet fritters can be made with the same batter by omitting the fruit juice and sugar.
