How to Make Beignet Batter
- Beat egg yolks until light, add sugar and salt, beat well add flour. Add fruit juice, butter, an enough water to make the batter like pancake batter. Fold in stiffly beaten egg whites.
- You can dip fruit in batter/ or not. Deep fry batter until a golden brown. Drain and sprinkle with powdered sugar.
- Meat, Fish, vegetable, and omlet fritters can be made with the same batter by omitting the fruit juice and sugar.
