banana stuffed french toast!!!

This is absolutely the best breakfast I ever ate!!! I love french toast but this takes it over the top with the banana stuffing and the thick rich batter! YUM! I got this recipe from a food friend named Sanzoe. She got it from a Bed and Breakfast place that she visited. I added my photo.

Ingredients

  • 1 large egg
  • 2 cups milk
  • 2 cups flour
  • 2 tablespoons pure vanilla extract
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 2 tablespoons unflavored malt powder(made by carnation) but i used powdered milk
  • 1/2 - banana per person
  • 2 slices cinnamon bread per person
  • 1 teaspoon per person-cinnamon sugar
  • oil - for frying

How To Make banana stuffed french toast!!!

  • Step 1
    Mix first 8 ingredients together in a large bowl until smooth - batter should be slightly thick.
  • Step 2
    Then slice each banana in half and then legnthwise in thirds.
  • Step 3
    You should have 6 long slices from each banana.
  • Step 4
    Place bananas in single layer on one slice of bread.
  • Step 5
    Sprinkle with cinnamon sugar and then place the remaining slice of bread on top to make a banana sandwhich.
  • Step 6
    With an open palm smash each sandwich tightly together. This is important so sandwich does not separate while cooking.
  • Step 7
    Repeat for each serving.
  • Step 8
    While oil is heating in large frying pan, dip each sandwhich into batter coating well and then place into pan with hot oil.
  • Step 9
    Cook on medium-high heat being careful not to scortch. Cook without turning for about one minute and then flip.
  • Step 10
    Top with butter and syrup and ENJOY!
