A wonderful breakfast treat, full of oats, bananas, nuts and cinnamon. I omit the sunflower seeds, personally, but this is just a fantastic choice for a nice breakfast treat!

Ingredients
- 3/4 cup butter, softened
- 1 cup brown sugar
- 1 - egg
- 1 teaspoon salt
- 1/2 teaspoon cinnamon
- 4 cups oats
- 1 1/2 cups bananas, mashed
- 1/2 cup chopped nuts
- 1/2 cup dried currants (see notes)
- 1/2 cup sunflower seeds
How To Make banana breakfast bars, mom's

Step 1Oven to 350 degrees. Grease 9x13. Cream butter and sugar until light and fluffy. At medium speed, beat in egg, salt, cinnamon and banana. Stir in remaining ingredients. Turn batter into pan and bake 45--55 minutes or until toothpick comes out clean. Cool completely. Cut into 12 bars. Put into plastic bags, seal and freeze. Take out the night before eating.

Step 2Note: If you don't want to use currants, try raisins, prunes or apricots. Mom used all of them and like them.
