A wonderful breakfast treat, full of oats, bananas, nuts and cinnamon. I omit the sunflower seeds, personally, but this is just a fantastic choice for a nice breakfast treat!

Ingredients

  • 3/4 c
    butter, softened
  • 1 c
    brown sugar
  • 1
    egg
  • 1 tsp
    salt
  • 1/2 tsp
    cinnamon
  • 4 c
    oats
  • 1 1/2 c
    bananas, mashed
  • 1/2 c
    chopped nuts
  • 1/2 c
    dried currants (see notes)
  • 1/2 c
    sunflower seeds

How to Make Banana Breakfast Bars, Mom's

Step-by-Step

  1. Oven to 350 degrees. Grease 9x13. Cream butter and sugar until light and fluffy. At medium speed, beat in egg, salt, cinnamon and banana. Stir in remaining ingredients. Turn batter into pan and bake 45--55 minutes or until toothpick comes out clean. Cool completely. Cut into 12 bars. Put into plastic bags, seal and freeze. Take out the night before eating.
  2. Note: If you don't want to use currants, try raisins, prunes or apricots. Mom used all of them and like them.
