Ingredients
- 1 large banana, very ripe
- 1 extra banana for garnish, sliced
- 1/4 cup smooth almond butter
- 2 large eggs
- honey, for serving
How To Make banana and almond butter pancakes

Step 1In a medium bowl, mash together the ripe banana and almond butter until smooth, then whisk in the eggs.

Step 2Heat a skillet over medium heat. Add small scoops (about 2 tablespoons) of batter to skillet and cook until bubbles burst around edges and center. Flip and cook for an extra minute or until golden brown

Step 3Transfer to a baking sheet or plate, cover loosely with foil, and keep warm in the lowest oven setting. Repeat with the rest of the batter.

Step 4To serve, add a few banana rounds and a drizzle of honey.
