Ingredients

  • 1 large banana, very ripe
  • 1 extra banana for garnish, sliced
  • 1/4 cup smooth almond butter
  • 2 large eggs
  • honey, for serving

How To Make banana and almond butter pancakes

  • Step 1
    In a medium bowl, mash together the ripe banana and almond butter until smooth, then whisk in the eggs.
  • Step 2
    Heat a skillet over medium heat. Add small scoops (about 2 tablespoons) of batter to skillet and cook until bubbles burst around edges and center. Flip and cook for an extra minute or until golden brown
  • Step 3
    Transfer to a baking sheet or plate, cover loosely with foil, and keep warm in the lowest oven setting. Repeat with the rest of the batter.
  • Step 4
    To serve, add a few banana rounds and a drizzle of honey.
