Ingredients

  • 2 c
    pumpkin puree
  • 1 1/2 c
    milk
  • 1/2 c
    brown sugar
  • 2 large
    eggs
  • 1 1/2 tsp
    ground cinnamon
  • 3/4 tsp
    baking powder
  • 1/2 tsp
    ground ginger
  • 1/2 tsp
    vanilla extract
  • 1/4 tsp
    ground nutmeg
  • 2 1/2 c
    old fashioned oats
  • 1/2 can(s)
    chopped pecans
  • 1/2 c
    dried cranberries

How to Make Baked Pumpkin Oatmeal

Step-by-Step

  1. preheat oven to 350.
  2. spray 8x8 inch baking dish with nonstick cooking spray.
  3. in a large bowl, mic all ingredients, except oats, pecans and cranberries until smooth. fold in remaining ingredients until totally combined.
  4. pour the oatmeal mixture into the dish and spread evenly. sprinkle the top with brown sugar.
  5. cover with foil and bake for 30 minutes, then remove foil and bake for additional 15 minutes.
