Ingredients

  • 3 cups old fashioned oats (not quick cooking)
  • 1 cup brown sugar (if you're worried about sugar intake, use the brown sugar/splenda blend)
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon pumpkin pie spices
  • 1/2 teaspoon salt
  • 1/4 cup dried fruit of choice such as raisins, cranberries, chopped dates, etc.
  • 1 1/4 cups milk
  • 1/2 cup applesauce (cinnamon applesauce is especially good)
  • 2 teaspoons vanilla
  • 2 - eggs

How To Make baked oatmeal

  • Step 1
    Preheat oven to 350 degrees.
  • Step 2
    Spray a 9x9 baking pan with non-stick cooking spray. Thoroughly mix all of the dry ingredients in a large bowl. Pour into the prepared baking dish.
  • Step 3
    Whisk all of the wet ingredients together until thoroughly blended. Pour over the dry ingredients in the baking pan and incorporate them well. Bake for 35-40 minutes until the edges are very brown. Serve in a bowl with milk, if desired.
  • Step 4
    This recipe can be made without the fruit OR using chocolate and/or peanut butter chips.
