baked oatmeal
I found this recipe online but have made substitutions to it to lower the calories & fat in it. My family loves this with pancake syrup drizzled over it. **Feel free to substitute part of the oats with toasted wheat germ or ground flax seed.

Ingredients
- 3 cups oats
- 1/3 cup melted butter
- 2 - large eggs, beaten
- 1/2 cup brown sugar
- 2 tablespoons honey
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons vanilla extract
- 1 1/2 teaspoons cinnamon, nutmeg or pumpkin pie spice
- 1/4 teaspoon salt
- 1 cup + 2 tbsp milk
How To Make baked oatmeal

Step 1Grease a 1 1/2 qt baking dish.

Step 2In a blender, beat the melted butter, eggs, brown sugar, honey, baking powder, vanilla, spice, salt & milk.

Step 3Blend well & make sure there are no lumps.

Step 4Pour into a bowl, add oats & combine.

Step 5Pour into prepared baking dish & pat down.

Step 6Cover with plastic wrap & chill overnight.

Step 7In the morning, remove plastic wrap. Bake at 350' for 35 minutes or until set in the middle.

Step 8You can bake it longer if you prefer it to be crispy on the edges.

Step 9Serve with milk poured over or maple syrup drizzled over it. Great as is too.
