I received this recipe from my good friend, Kathleen. She said it has been in her family for years and they love having it on hand. This makes a nice size batch for during the week. We like this recipe & hope you will too. It's a make ahead & stores good. A quick breakfast for those of you guilty of hitting that snooze alarm!

Ingredients

  • 2 - beaten eggs
  • 1/2 cup oil
  • 1 cup brown sugar
  • 3 cups quick or old fashioned oatmeal
  • - (we prefer the old fashioned)
  • 1 cup craisins or raisins (presoak for 10 min - drain)
  • 1 cup chopped nuts
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons cinnamon
  • dash of - nutmeg
  • 1 teaspoon vanilla
  • 1 cup milk

How To Make baked oatmeal

  • Step 1
    Preheat Oven to 350*. While Oven is preheating, Pre-soak Craisins for 10 minutes, drain & set aside.
  • Step 2
    In the meantime, beat eggs, oil & sugar together until somewhat creamy.
  • Step 3
    Add rest of the ingredients, including the Craisins. Mix good and place all into a 9x9 'greased' pan.
  • Step 4
    Bake at 350* for 35-45 minutes (depending on altitude. Higher altitudes require a bit longer baking time). Cool...
  • Step 5
    Keep in refrigerator until needed. Heat individual portions in a microwave for a couple min (using a microwave safe bowl & pads to remove 'hot' dish). Add milk or cream - just like any other cereal. I prefer Honey for my sweetner, but that is my personal choice.
