Ingredients

  • 2 cups dry white wine
  • 1/2 cup granulated sugar
  • 2 star anise
  • 2 sprigs rosemary
  • 4 pears, peeled cored and quartered
  • 1 cup hazelnuts, chopped
  • 1 baguette, cut into 4 equal slices
  • olive oil
  • 1 slice bacon
  • 1/2 cup maple syrup
  • 1/2 pound burrata
  • fresh basil leaves

How To Make bacon maple burrata toast with poached pears

  • Step 1
    Preheat oven 400 degrees F. In a large saucepan, combine 2 cups of water with the white wine, sugar star anise and rosemary. Bring to a simmer over medium high heat. Add the pears and cook until they are tender about 7 minutes.
  • Step 2
    Place the hazelnuts in a dry pan and toast them over medium heat until browned.
  • Step 3
    Strain out the pears and cut into small pieces.
  • Step 4
    Brush the baguettes with olive oil and place in the oven and toast until browned.
  • Step 5
    In a saucepan, cook the bacon until crisp. Remove the bacon with a slotted spoon and set aside. Add the maple syrup. Let reduce a bit to become quite sticky.
  • Step 6
    Add the pear mixture and cook one more minute.
  • Step 7
    Snack on the bacon. Add the burrata to each piece of toasted baguette. Spoon the pear mixture over top and add a little basil.
