bacon maple burrata toast with poached pears

Ingredients
- 2 cups dry white wine
- 1/2 cup granulated sugar
- 2 star anise
- 2 sprigs rosemary
- 4 pears, peeled cored and quartered
- 1 cup hazelnuts, chopped
- 1 baguette, cut into 4 equal slices
- olive oil
- 1 slice bacon
- 1/2 cup maple syrup
- 1/2 pound burrata
- fresh basil leaves
How To Make bacon maple burrata toast with poached pears

Step 1Preheat oven 400 degrees F. In a large saucepan, combine 2 cups of water with the white wine, sugar star anise and rosemary. Bring to a simmer over medium high heat. Add the pears and cook until they are tender about 7 minutes.

Step 2Place the hazelnuts in a dry pan and toast them over medium heat until browned.

Step 3Strain out the pears and cut into small pieces.

Step 4Brush the baguettes with olive oil and place in the oven and toast until browned.

Step 5In a saucepan, cook the bacon until crisp. Remove the bacon with a slotted spoon and set aside. Add the maple syrup. Let reduce a bit to become quite sticky.

Step 6Add the pear mixture and cook one more minute.

Step 7Snack on the bacon. Add the burrata to each piece of toasted baguette. Spoon the pear mixture over top and add a little basil.
