How can one go wrong with potatoes and bacon? This is a hearty breakfast dish from the Tyrolean region of Austria. It's great with a fried egg on top!

Ingredients

  • 1 1/2 teaspoons canola oil
  • 14 ounces smoked bacon lardons (or cooked ham)
  • 1 onion, cut into chunks
  • 1 pound cooked potatoes (preferably waxy ones), cold and cut into small chunks
  • 1 teaspoon caraway seeds
  • 1 1/2 teaspoons hot or sweet paprika
  • 1 tablespoon flat-leaf parsley, chopped

How To Make austrian potato fry-up

  • Step 1
    Heat the oil in a large frying pan, then fry the bacon and onion together for 10 minutes until the bacon is golden.
  • Step 2
    With a slotted spoon, remove the bacon and onion from the pan. Add the potatoes to the pan and fry for 10 minutes or until golden.
  • Step 3
    Add the caraway and paprika, season well with salt and pepper to taste, then fry for another minute, stirring to release their fragrance. Return the bacon and onion to the pan, taste for seasoning, then add the parsley.
  • Step 4
    Serve hot and - for a real authentic touch - with a fried egg on top.
