Ingredients

  • FOR THE LEMON MAYO
  • 1 cup mayonnaise
  • 3 tablespoons freshly grated Parmesan cheese, plus more for garnish
  • 1 tablespoon lemon zest
  • 3 tablespoons lemon juice
  • 1 teaspoon cracked black pepper
  • salt to taste
  • ASPARAGUS AND EGGS
  • 2 bunches asparagus, trimmed
  • 2 tablespoons olive oil
  • salt
  • 4 large eggs
  • 2 tablespoons butter

How To Make asparagus with lemon pepper mayo and eggs

  • Step 1
    Make the mayo by mixing all ingredients. Set aside.
  • Step 2
    Bring a large pot of water to a boil. Throw the asparagus in the water and blanch for 1 minute. Drain and plunge in ice water. Remove from the water and dry them with a paper towel
  • Step 3
    Add olive oil to a large skillet. Add the asparagus in batches and brown cook until browned a bit. Season with salt. In another skillet, add the butter. Once the butter is melted, add the eggs and cook until white is set, flipping once.
  • Step 4
    To plate add the mayonnaise on a plate top with asparagus, then the egg then garnish with Parmesan.
