- FOR THE LEMON MAYO
- 1 cup mayonnaise
- 3 tablespoons freshly grated Parmesan cheese, plus more for garnish
- 1 tablespoon lemon zest
- 3 tablespoons lemon juice
- 1 teaspoon cracked black pepper
- salt to taste
- ASPARAGUS AND EGGS
- 2 bunches asparagus, trimmed
- 2 tablespoons olive oil
- salt
- 4 large eggs
- 2 tablespoons butter
How To Make asparagus with lemon pepper mayo and eggs

Step 1Make the mayo by mixing all ingredients. Set aside.

Step 2Bring a large pot of water to a boil. Throw the asparagus in the water and blanch for 1 minute. Drain and plunge in ice water. Remove from the water and dry them with a paper towel

Step 3Add olive oil to a large skillet. Add the asparagus in batches and brown cook until browned a bit. Season with salt. In another skillet, add the butter. Once the butter is melted, add the eggs and cook until white is set, flipping once.

Step 4To plate add the mayonnaise on a plate top with asparagus, then the egg then garnish with Parmesan.
