We love asparagus so I came up with this recipe for quiche. We love it for a chilly night meal or Sunday brunch.

Ingredients
- - 1 lb. fresh asparagus or 10 oz. frozen
- - 9 inch prepared pie shell
- 1 teaspoon salt
- 1 - egg white
- 2 cups swiss cheese, shredded
- 10 - bacon strips, fried and crumbled
- 4 - eggs
- 1 1/2 cups light cream
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 1 pinch pepper
- - tomato for garnish
How To Make asparagus quiche

Step 1Clean and cut asparagus into 1/2 inch pieces. Cook with the one tsp. of salt and drain.

Step 2Brush the bottom of your pie shell with egg white.

Step 3Mix together the asparagus, cheese and bacon. Place in your pie crust.

Step 4Beat together the eggs, cream, nutmeg, 1/4 tsp. of salt and the pepper. Pour into the crust over the asparagus and bacon. Bake at 400 degrees for 30-35 minutes or until the center is set.

Step 5Slice tomatoes and place them on top for garnish before serving.
