We love asparagus so I came up with this recipe for quiche. We love it for a chilly night meal or Sunday brunch.

1 lb. fresh asparagus or 10 oz. frozen
9 inch prepared pie shell
1 tsp
egg white
2 c
swiss cheese, shredded
bacon strips, fried and crumbled
1 1/2 c
light cream
1/4 tsp
1/4 tsp
1 pinch
tomato for garnish

How to Make Asparagus Quiche


  • 1Clean and cut asparagus into 1/2 inch pieces. Cook with the one tsp. of salt and drain.
  • 2Brush the bottom of your pie shell with egg white.
  • 3Mix together the asparagus, cheese and bacon. Place in your pie crust.
  • 4Beat together the eggs, cream, nutmeg, 1/4 tsp. of salt and the pepper. Pour into the crust over the asparagus and bacon. Bake at 400 degrees for 30-35 minutes or until the center is set.
  • 5Slice tomatoes and place them on top for garnish before serving.
