We love asparagus so I came up with this recipe for quiche. We love it for a chilly night meal or Sunday brunch.

    1 lb. fresh asparagus or 10 oz. frozen
  • ·
    9 inch prepared pie shell
  • 1 tsp
  • 1
    egg white
  • 2 c
    swiss cheese, shredded
  • 10
    bacon strips, fried and crumbled
  • 4
  • 1 1/2 c
    light cream
  • 1/4 tsp
  • 1/4 tsp
  • 1 pinch
  • ·
    tomato for garnish

How to Make Asparagus Quiche


  1. Clean and cut asparagus into 1/2 inch pieces. Cook with the one tsp. of salt and drain.
  2. Brush the bottom of your pie shell with egg white.
  3. Mix together the asparagus, cheese and bacon. Place in your pie crust.
  4. Beat together the eggs, cream, nutmeg, 1/4 tsp. of salt and the pepper. Pour into the crust over the asparagus and bacon. Bake at 400 degrees for 30-35 minutes or until the center is set.
  5. Slice tomatoes and place them on top for garnish before serving.
