We love asparagus so I came up with this recipe for quiche. We love it for a chilly night meal or Sunday brunch.

Ingredients

  • - 1 lb. fresh asparagus or 10 oz. frozen
  • - 9 inch prepared pie shell
  • 1 teaspoon salt
  • 1 - egg white
  • 2 cups swiss cheese, shredded
  • 10 - bacon strips, fried and crumbled
  • 4 - eggs
  • 1 1/2 cups light cream
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 pinch pepper
  • - tomato for garnish

How To Make asparagus quiche

  • Step 1
    Clean and cut asparagus into 1/2 inch pieces. Cook with the one tsp. of salt and drain.
  • Step 2
    Brush the bottom of your pie shell with egg white.
  • Step 3
    Mix together the asparagus, cheese and bacon. Place in your pie crust.
  • Step 4
    Beat together the eggs, cream, nutmeg, 1/4 tsp. of salt and the pepper. Pour into the crust over the asparagus and bacon. Bake at 400 degrees for 30-35 minutes or until the center is set.
  • Step 5
    Slice tomatoes and place them on top for garnish before serving.
