I made these for breakfast this morning...they were a hit. Make sure you slice your apples thin enough to get done. I used Granny Smiths. I loved the tartness against the sweet syrup...

Ingredients

  • 2
    tart apples (granny smith), peeled and cored (i peel, slice in rounds, then cut out the center)
  • 2 Tbsp
    cinnamon
  • 2
    eggs, lightly beaten
  • 2 c
    whole wheat or white flour
  • 2 1/2 c
    milk
  • 1 tsp
    salt
  • 2 Tbsp
    sugar
  • 4 tsp
    baking powder

How to Make Apple In The Middle Pancakes

Step-by-Step

  1. Slice the apples into thin rings, toss with cinnamon, and set aside.
  2. Mix together remaining ingredients until blended.
  3. For each pancake, pour 1/3 cup batter onto hot griddle. Place 1 apple ring in center of each pancake. When set, flip pancake to cook other side
  4. Turn onto plate so that apple ring is showing. Serve with warmed syrup
