apple cinnamon couscous

I came up with this recipe one morning when I had a bunch of apples and some leftover couscous from the night before, it turned out so yummy. Great for camping!

Ingredients

  • 1 cup water
  • 1 cup couscous, uncooked
  • 3 - apples, cored and diced
  • 1/4 cup brown sugar, packed
  • 2 tablespoons cinnamon
  • 1/4 cup butter
  • 1/2 cup chopped pecans
  • 1/4 cup raisins

How To Make apple cinnamon couscous

  • Step 1
    Prepare couscous according to package directions.
  • Step 2
    In a large frying pan, melt butter over medium heat. In a medium bowl combine apples, brown sugar and cinnamon until apples are coated. Add apples to butter in pan.
  • Step 3
    Cover and cook on low for 10 minutes or until apples are starting to get tender. Add pecans, cook a little longer. Add raisins and cooked couscous until combined. Top with additional brown sugar, if desired. Serve warm
