  • 1 3/4 c
    all purpose flour
  • 1/3 c
  • 2 tsp
    baking powder
  • 1/2 tsp
  • 1/4 tsp
  • 1/4 tsp
    ground nutmeg
  • 1/8 tsp
    ground allspice
  • 1/8 tsp
    ground ginger
  • 1
    egg, lightly beaten
  • 3/4 c
  • 1/4 c
    canola oil
  • 1 c
    thick country store apple butter (divided)

  • 1/2 c
    chopped pecans or walnuts
  • 3 Tbsp

How to Make Apple Butter Muffins


  1. In a small bowl, combine the first eight ingredients. Combine egg, milk, oil and 1/2 cup apple butter.
  2. Stir into dry ingredients just until moistened.Fill greased or paper lined muffin cups with a rounded tablespoon of batter.
  3. Top each with a rounded tablespoon of the remaining apple butter and then remaining batter.
  4. Combine topping ingredients, sprinkle over muffins.
  5. Bake at 400 for 15-18 minutes. cool 10 minutes before removing from muffin pan.
