I hadn't found a quinoa recipe I liked, but I found a recipe that had promise. It served as the inspiration for these mini frittatas. You can add any ingredients and spices you like to suit your taste and dietary needs. They can also be baked as regular or large muffins by adjusting the baking time. Refrigerate or freeze and pop them in the microwave for an easy snack or meal. Make them healthy or decadent, just be sure to season well, as they can be bland.

Ingredients
- 1 cup water
- 1/2 cup quinoa
- 2 - eggs
- 2 - egg whites
- 1 cup zucchini, shredded
- 1 cup shredded cheddar cheese
- 1/2 cup ham, finely diced
- 1/4 cup diced onion
- 1/4 cup chopped fresh basil
- - salt & pepper

Step 1Preheat oven to 375 degrees. Grease a 24 cup mini muffin pan.

Step 2Bring the quinoa and water to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until quinoa is tender and the water has been absorbed, 15 to 20 minutes.

Step 3Place eggs and egg whites in a large bowl and whisk to combine. Add cooked quinoa, zucchini, cheese, ham, onions, basil, salt and pepper to the eggs. Stir to mix all the ingredients.

Step 4Spoon mixture into mini muffin cups.

Step 5Bake in preheated oven until the edges of the frittatas are golden brown,10 - 15 minutes.

Step 6Remove from pan and serve hot or at room temperature.
