amazing omlet muffins
This recipe is originally from Frances Cunicelli and shared with the Curious Cuisiners club that I belong to. I have made double batches of this and sometimes used the 12 spot muffin tins. I put them in a large plastic ziplock bag, store them in the fridge, and enjoy for a quick microwave warmed breakfast. To make them last even longer, you could store them in the freezer and reheat them in the microwave for a minute or two when you want to enjoy them. This is a favorite recipe of mine and is made often.

Ingredients
- 4 - eggs
- 1/4 cup milk
- 1/2 teaspoon baking powder
- 1/2 teaspoon oil
- - salt & pepper
- - grated cheese (i used cheddar)
- - favorite omlet fillings (your choice: i used onions, bell peppers and deiced ham)
How To Make amazing omlet muffins

Step 1Preheat oven to 375 degrees. In a skillet, cook up your favorite omelet ingredients.

Step 2Grease a 6 spot muffin tin. Fill each muffin cup with cooked omelet ingredients. Top with shredded cheese.

Step 3Mix eggs, milk baking powder, oil and salt and pepper in a bowl. Pour egg mixture in each muffin cup. You should fill about 4/5 of the way to the top.

Step 4Put in oven and bake for 20-25 minutes. Take out of oven and let rest for 5 minutes before serving or storing.
