These jewels were served at a breakfast I recently attended and were a real treat and enjoyed by everyone. I love anything that has the almond flavoring.

Ingredients

  • 12 ounces cream cheese
  • 2 - eggs
  • 2 tablespoons sugar
  • 1 tablespoon grated orange rind
  • 1 cup butter
  • 1 1/2 cups sugar
  • 4 - eggs
  • 3 cups flour
  • 2 teaspoons baking powder
  • 1 cup milk
  • 1 teaspoon almond extract
  • 1 cup toasted almonds

  • Step 1
    The first four ingredients are the filling for these muffins. Beat filling; set aside. Cream butter and sugar until fluffy. Add eggs, one at a time. Mix dry ingredients. Add flour and milk alternately. Add extract and almonds. Fill muffin tins 1/2 full. Spoon approximately 1 1/2 tablespoons in each muffin. Top filling with muffin batter. Bake for 15 - 20 minutes at 400 degrees. ENJOY!
