sweet & savory summer grits
Here is one of those recipes that took shape based on what happened to be in the refrigerator. One bite will be savory and the next will be sweet. Perfect summer breakfast with sliced fresh tomatoes.

Ingredients
- 3 cups milk
- 1 cup water
- 2 teaspoons kosher salt
- 1/2 teaspoon fresh ground pepper
- 1 cup stone ground grits (not instant)
- 1/2 - sweet onion, fine diced
- 1 cup favorite ham, diced
- 1 tablespoon bacon grease or olive oil
- 1 teaspoon tabasco chipotle pepper sauce
- 1 cup sharp cheddar, grated
- 2 ounces cream cheese, softened
- 2 tablespoons unsalted butter
- 2 tablespoons honey or sorghum molasses
How To Make sweet & savory summer grits

Step 1Bring first 4 ingredients to a slight boil in a sauce pan.

Step 2Add grits, stir, cover, and reduce heat to low until liquid is absorbed - 30 minutes to one hour total time. STIR OFTEN.

Step 3As grits begin to cook, saute onion and ham in bacon grease until the onions are soft and slightly browned. Add mixture to the grits.

Step 4When grits are about 5 minutes from the thickness that you prefer, add the next 4 ingredients and incorporate completely. Allow grits to finish cooking.

Step 5Ladle grits into bowls and drizzle with honey or sorghum molasses. Serve hot with sliced summer tomatoes.
