Sweet & Savory Summer Grits

Here is one of those recipes that took shape based on what happened to be in the refrigerator. One bite will be savory and the next will be sweet. Perfect summer breakfast with sliced fresh tomatoes.

  • 3 c
  • 1 c
  • 2 tsp
    kosher salt
  • 1/2 tsp
    fresh ground pepper
  • 1 c
    stone ground grits (not instant)
  • 1/2
    sweet onion, fine diced
  • 1 c
    favorite ham, diced
  • 1 Tbsp
    bacon grease or olive oil
  • 1 tsp
    tabasco chipotle pepper sauce
  • 1 c
    sharp cheddar, grated
  • 2 oz
    cream cheese, softened
  • 2 Tbsp
    unsalted butter
  • 2 Tbsp
    honey or sorghum molasses

How to Make Sweet & Savory Summer Grits


  1. Bring first 4 ingredients to a slight boil in a sauce pan.
  2. Add grits, stir, cover, and reduce heat to low until liquid is absorbed - 30 minutes to one hour total time. STIR OFTEN.
  3. As grits begin to cook, saute onion and ham in bacon grease until the onions are soft and slightly browned. Add mixture to the grits.
  4. When grits are about 5 minutes from the thickness that you prefer, add the next 4 ingredients and incorporate completely. Allow grits to finish cooking.
  5. Ladle grits into bowls and drizzle with honey or sorghum molasses. Serve hot with sliced summer tomatoes.
