2Mix sugar & peppers. Toss bacon thoroughly to coat.
3Line a jelly roll pan w/heavy duty foil. Place a cooling rack over the foil & lay the bacon on the rack, being careful not to overlap the bacon (this will slow cooking).
4Place pan in oven, even if it's not fully heated yet. Bake at least 15 minutes or until desired doneness. I cook mine just over 20 minutes.
** Cooling rack optional-bacon can go directly on the foil. Personally, I prefer the rack.
** I use thin sliced bacon... if using thick bacon add at least 5-6 minutes or so to cooking time.
** Vary the spices to suit your tastes.
