My dad used to make this for us growing up, and my kids really love it too. I don't like the consistency of omlettes, i only like my eggs scrambled, so this works perfectly for my family.

Ingredients
- 8 - potatoes
- 1 - onions, yellow, medium, chopped
- 5-6 cloves garlic, minced
- 4 tablespoons cooking oil
- 1 pound sausage, ground
- 12 - eggs
- 1 cup cheddar cheese, shredded
- SERVE WITH:
- - orange juice
- 1 - loaf of bread, for toast
How To Make scrambled omlette

Step 1Chop the potatoes into small pieces.

Step 2heat the oil in the pan. add onions and garlic and cook until the onions are transculent.

Step 3then add the potatoes and plenty of SALT & PEPPER & OREGANO.

Step 4cook until potatoes are done, approx 15-20 mins. stir frequently.

Step 5in another pan, brown the sausage, then drain on paper towels.

Step 6mix the eggs in a bowl and put aside. you could also add milk, salt and pepper to the eggs if you'd like.

Step 7when the potatoes are done, add the sausage, the eggs, and the cheese. continue to cook until the eggs are done.
