Nothing compares to home made sausage. I made a double batch, browned and what wasn't eaten gets froze for later use. It's nice to have these ready to go when you need them. Oh, and by all means....make these as spicy as you want, or not at all... Enjoy!

Ingredients

  • 1 pound ground pork
  • 1 teaspoon salt
  • 1 teaspoon black pepper, i like to use fresh ground
  • 1 teaspoon fresh sage, finely chopped or dried
  • 1 teaspoon fresh thyme, finely chopped or dried
  • 1/4 teaspoon fresh rosemary finely chopped or dried
  • 1/2 tablespoon brown sugar
  • 1/4 teaspoon cayenne pepper, more if you wish
  • 1/4 teaspoon red pepper flakes, more if you wish

How To Make sausage

  • Step 1
    In a bowl, mix all ingredients well. Shape patties. I make mine about 3 inches around each. Place the patties in a skillet with small amount of oil. On medium heat, brown on each side. About 6 minutes per side, depending on how brown you like them. Enjoy!
