Growing up in Texas where cattle is raised, ground beef is the most affordable cut of meat. My family learned many different ways to stretch out our meal. This recipe is a wonderful blend of ground beef, onions, and potatoes.

lean ground beef
1/4 c
diced onion
1/4 tsp
ground cumin
1/2 tsp
ground coriander
1/4 tsp
garlic powder
bay leaf
1/2 c
rotel diced tomatoes and green chilies
1 Tbsp
olive oil, extra virgin
1 c
raw diced potatoe
1 tsp
minced garlic
salt and pepper to taste
1/2 c
beef stock

How to Make Picadillo Taco


  • 1In a medium heated skillet add olive oil, onions, and garlic. Saute until slightly translucent. add beef stock, potatoes/bay leaf turn heat to low and simmer for 5 minutes.
  • 2Stir in ground beef; cook over medium heat until brown. add coriander, cumin, garlic powder, and rotel tomatoes. cook for 10 mins or when the potatoes are completely tender not mushy. Remove bay leaf.
  • 3Warm up tortilla, add filling, and serve.
