I make breakfast every morning for my teenager son. I make these so he can grab and eat on his way out the door.

Ingredients

  • 2 or 3 - biscuits,i make a batch on sunday to have for the week
  • 1 tablespoon butter
  • 4 or 5 - jalapeno pepper rings, the nacho kind, chopped
  • 2 large eggs
  • 1/2 cup cheddar cheese, shredded
  • 1 teaspoon emirls esscence or creole season
  • 2-3 slices of cooked bacon, or your favorite breakfast meat (optional)
  • - dab of grape jelly
  • - dab of yum-yum sauce or honey mustard

How To Make on the go breakfast biscuit

  • Step 1
    In a small bowl whisk eggs with salt and pepper, add a tablespoon water.(you can use some of the juice from the jar of the jalapeno). Whisk again. Mix the emirls essence and cheese until cheese is well coated.
  • Step 2
    In a non-stick pan heat butter on med to med-high heat. Add the jalapenos and cook until fragrant. Pour in the eggs and prepare a omelete. Sprinkle cheese and fold over. Remove from heat. Divide the omelete into 2-3 sections.
  • Step 3
    Slice the biscuit in half. On one side put a dab of grape jelly, then bacon. Top with one of the egg section. Add a dab of Yumm-Yumm, or honey mustard sauce. Top with the other half of the bicuit piece.
  • Step 4
    Wrap each biscuit individually in plastic wrap. Microwave ( in the plastic wrap) for 30-40 seconds to reheat.
