My Mom's friend who was raised in the mountains gave me this recipe. Actually, she didn't have a recipe, I watched and wrote down what she used and what she did. Later, I made it for her and she said I had nailed it !!

How To Make high country sausage gravy and biscuits
-
Step 1Using a cast iron skillet, brown the sausages. Remove sausages from skillet, leaving grease in skillet. Melt butter in skillet, then add flour slowly and brown it, stirring constantly. Get it really brown.
-
Step 2When brown, add milk slowly. Stirring constantly. (I use a whip) When thick, return the cooked sausage to the skillet. Simmer for about 5 minutes.
-
Step 3Make biscuits using the directions on the side of the Bisquick box. Top the finished biscuit halves with the sausage gravy.
-
Step 4Cooks note: You must use a cast iron skillet to get the butter browned enough. I have used English Muffins in place of the biscuits.
