Ingredients
- 2 cups frozen potatoes, diced or shredded
- 1/2 cup chopped onion
- 1/4 medium green bell pepper, cut into 1-inch strips
- 1/4 medium red or yellow bell pepper, cut into 1-inch strips
- 2 teaspoons oil
- 12 ounces spam, cut into julienne strips
- 4 - eggs, or egg product substitute
- 1/4 teaspoon dried basil
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- - hot sauce, to taste
- 1/4 cup cheddar cheese, shredded

Step 1In large non-stick skillet, cook potatoes, onion, and peppers in oil over medium-high heat 5 minutes, stirring constantly.

Step 2Add spam; cook and stir 5 minutes.

Step 3In small bowl, combine eggs, basil, salt, pepper, and hot pepper sauce; blend well.

Step 4Pour over mixture in skillet. Cover. Cook over medium-low heat 8-12 minutes or until set.

Step 5Sprinkle with cheese; remove from heat.
