I don't know about you but I LOVE goetta. This is a real easy recipe and you can tweak it to suit you're taste buds. I usually add in about 1 tablespoon of cracked red pepper the last 30 minutes of cook time. This will also freeze if wrapped and sealed in an air tight container.

Ingredients

  • 1 pound ground chuck
  • 1 pound hot sausage
  • 8 cups water
  • 2 1/2 cups pinhead oats
  • 1 - large onion, diced
  • 6 - bay leaves, dried
  • 6 to 8 cloves garlic, grated
  • 3 teaspoons sea salt
  • 1 1/2 teaspoons fresh ground black pepper
  • 2 teaspoons rubbed sage

How To Make goetta

  • Step 1
    Put water into large pan (I use a roasting pan) bring to fast roiling boil. Add salt, pepper and oats.
  • Step 2
    Lower heat to low. Cook for 2 hours, stirring often, keeping lid on the pan.
  • Step 3
    Mix the ground chuck, hot sausage, onion, garlic, sage and bay leaves. Add to the oats and mix very well. Let cook an additional hour stirring often.
  • Step 4
    After it has cooked and thickened slightly, pour into loaf pans and cool. Place in the refrigerator and allow to cool completely. Will keep for several days.
  • Step 5
    When you are ready to cook some, slice into 1/4 to 1/2 inch slices depending on how thick you like it. Fry it up in a cast iron skillet with bacon grease until well browned.
