I don't know about you but I LOVE goetta. This is a real easy recipe and you can tweak it to suit you're taste buds. I usually add in about 1 tablespoon of cracked red pepper the last 30 minutes of cook time. This will also freeze if wrapped and sealed in an air tight container.

Makes 2 loaf pans plus a bit more
Ingredients
- 1 pound ground chuck
- 1 pound hot sausage
- 8 cups water
- 2 1/2 cups pinhead oats
- 1 - large onion, diced
- 6 - bay leaves, dried
- 6 to 8 cloves garlic, grated
- 3 teaspoons sea salt
- 1 1/2 teaspoons fresh ground black pepper
- 2 teaspoons rubbed sage
How To Make goetta

Step 1Put water into large pan (I use a roasting pan) bring to fast roiling boil. Add salt, pepper and oats.

Step 2Lower heat to low. Cook for 2 hours, stirring often, keeping lid on the pan.

Step 3Mix the ground chuck, hot sausage, onion, garlic, sage and bay leaves. Add to the oats and mix very well. Let cook an additional hour stirring often.

Step 4After it has cooked and thickened slightly, pour into loaf pans and cool. Place in the refrigerator and allow to cool completely. Will keep for several days.

Step 5When you are ready to cook some, slice into 1/4 to 1/2 inch slices depending on how thick you like it. Fry it up in a cast iron skillet with bacon grease until well browned.
