ED suggested these sandwiches for Sunday breakfast.he said he made them t home for New Years morning and his guests loved them! I told Ed we need to cut down on heavy meals,gravy on a sandwich? he said"next week"

    1 lb breakfast sausage
  • ·
    canola oil
  • ·
    3 1/2 c milk
  • ·
    1/4 c flour
  • ·
    1/2 t. garlic powder
  • ·
    1/2 t onion powder
  • ·
    black pepper
  • ·
    1/4 t. ground sage
  • ·
  • ·
    1/4 t. crushed red pepper flakes
  • ·
    one dozen large eggs,well beaten
  • ·
    6 english muffins,split,and toasted

How to Make Ed's Breakfast Sandwich


  1. Combine spices.Sprinkle half the spices into the sausage,form into 12 equal patties;(about 1/4 inch thick). Heat a large skillet over medium-high heat. Add 1-2 teaspoon oil to pan; swirl to coat. Add patties; cook 2 minutes on each side or until done. Transfer patties to a plate. Leave drippings in pan.
    Combine flour and remaining spices , stirring with a whisk until smooth. Add seasoned flour & milk to pan; bring to a boil, scraping pan to loosen browned bits. Cook until thick and bubbly. Remove from heat.
    Poach eggs.
    Divide eggs evenly over bottom halves of muffins. Top each with 3 tablespoons gravy. Place a sausage patty and top half of muffin on each sandwich.
