How to Make Canadian Bacon Upside Down Cake
- In a 10 inch cast iron skillet melt butter over low heat. Remove from heat.
- Drain pineapple slices on paper towels.
Arrange 1 ring in center of skillet. Arrange the remaining pineapple around the edge.
- Layer bacon over pineapple slices, overlapping if necessary.
- Prepare cornbread mix and spoon over bacon and pineapple.
- Cover and cook over medium heat 15-18 minutes or until test done.
- Cut into wedges. Serve warm with maple syrup.
