We love this easy cake for breakfast with scrambled eggs. The bread, fruit and meat are all in the cake.

3 Tbsp
butter, unsalted
8 1/4 oz
can pineapple rings, drained
12 oz
package cornbread mix
ingredients for preparing cornbread as listed on package
maple syrup

How to Make Canadian Bacon Upside Down Cake


  • 1In a 10 inch cast iron skillet melt butter over low heat. Remove from heat.
  • 2Drain pineapple slices on paper towels.

    Arrange 1 ring in center of skillet. Arrange the remaining pineapple around the edge.
  • 3Layer bacon over pineapple slices, overlapping if necessary.
  • 4Prepare cornbread mix and spoon over bacon and pineapple.
  • 5Cover and cook over medium heat 15-18 minutes or until test done.
  • 6Cut into wedges. Serve warm with maple syrup.
